Instructions

  1. Prepare the Ganache:
    • Chop the vegan dark chocolate into small pieces and place them in a heatproof bowl.
    • Heat the coconut milk in a saucepan over medium heat until it starts to simmer. Do not boil.
    • Pour the hot coconut milk over the chopped chocolate. Let it sit for a minute, then stir until smooth.
    • Add the coconut oil, vanilla extract, chopped dates, and a pinch of sea salt to the mixture. Stir until well combined.
    • Cover the bowl and refrigerate for at least 2 hours, or until the ganache is firm enough to scoop.
  2. Shape the Truffles:
    • Place the desiccated coconut in a shallow bowl.
    • Using a small spoon or melon baller, scoop out small amounts of the chocolate ganache and roll them into balls with your hands.
    • Roll each truffle in the desiccated coconut to coat.
    • Place the coated truffles on a baking sheet lined with parchment paper.
  3. Set the Truffles:
    • Refrigerate the truffles for at least 30 minutes to firm up before serving.
    • Store the truffles in an airtight container in the refrigerator for up to a week.
